Licia Jaccard, Cooking Instructor

Born in the US and raised in France, Licia Jaccard comes from a family of restaurateurs, caterers and chefs. After going through formal training in France, Licia used her passion for food to travel through Europe and then the United States, discovering new sceneries and cultures as well as a considerable collection of original ethnic dishes. An avid cookbook collector and commentator, Licia is curious to discover the chemistry that makes a dish work and how it is rooted in its distinctive environment. When challenged to understand the Glycemic Index diet with a culinary perspective, she was able to read Michel Montignac's books and thesis in the text and, with Dr. Marshak's medical insight, derive from it an understanding of the different components of the program. Since then, Licia has developed and adapted more than 500 recipes that are in line with the program's diet. She also teaches cooking classes at the facility to ensure that patients have the ability and culinary knowledge to pursue the diet once they leave the clinic.
